Summer weather finally seems like it is here to stay, so the time for cookouts and outdoor gatherings is here! It is tricky to come up with healthy options to share for these occasions, as various dips and desserts seem to be the go-to. I’d like to share a recipe for the healthiest key lime pie around that I have been making for several years now, and it always ends up being a favorite! I always let everyone taste the pie before letting them know that the main ingredient of the filling is…….avocado!! The recipe is gluten and dairy free, raw, full of healthy coconut and avocado fat, and both the crust and the filling only have 4 ingredients each!
1 cup almonds or pecans (I prefer almonds)
½ cup walnuts
¼ cup coconut flour
2 cups dates (*pitted!)
¾ cup lime juice
¾ cup maple syrup
1 cup coconut oil (melted)
To make the crust, add the nuts, coconut flour, and dates to blender, in that order. Pulse until dates mix in and blender stops blending smoothly. Hand knead into a ball until the consistency is dough-like, and then press into a pie plate until evenly spread throughout the pan.
(This combination also makes a great base for homemade protein bars!)
To make the filling, add lime juice, maple syrup, melted coconut oil, and avocados into the blender, in that order. Blend until mixture is smooth and creamy. Pour into the pie plate and chill for 2 hours, then enjoy!
